
1/4 cup olive oil
2 Tablespoons garlic
1/2 teaspoon basil
1/4 heaping teaspoon dill weed
1/2 teaspoon thyme
1/2 teaspoon oregano
1/2 teaspoon parsley
1/4 teaspoon chili powder **this does give them a bit of a kick so half the amount if you’re cooking for heat sensitive people. If your crowd likes it really hot, I’d just go straight for the cayenne pepper **
1 teaspoon salt
1 teaspoon pepper
4 large potatoes, peeled and cubed into bite-sized pieces
Preheat oven to 475 degrees.
In a large bowl combine ingredients. Add cubed potatoes and toss to coat evenly. Place in single layer on baking sheet.
Roast for 20 – 30 minutes, turning occasionally to brown all sides. **My potatoes always seem to take the 30 minutes and I turn them every 10 minutes **
That’s it folks. Yes, several spices but it all adds up to perfection and they couldn’t be easier to actually bake. Enjoy!
