Pazookie 4

I whipped up a batch of these bad boys on a whim tonight.  I wanted to create a cross (or was it a marriage?) between a Pazookie and Pioneer Woman’s Baked Fudge.  Both separate recipes are heavenly in my book but sometimes the Baked Fudge is just too rich to handle after a big meal.  I was hoping a chocolate chip version would lessen that a bit and create an easier-to-handle dessert.   And it worked!  I would have snapped a picture before they were all dug into except that happened exactly 1.7 seconds after the ice cream was plopped on top.   Sorry but birthin’ and nursin’ four mini-humans has slowed my body down a bit and I just can’t keep up with that kind of pace.

So alas, the only pictures I could get (after I’d finished mine off of course.  If I’d hesitated, I would never have gotten a bite) were of Lil Blue eating his.  And that scenario was not such a pretty picture.  But at least you can get a glimpse of the ooey gooey goodness….

**Makes two ramekins**

2 1/2 Tablespoons softened butter

1/4 cup packed brown sugar

1 Tablespoon beaten egg

1/4 teaspoon vanilla

1/4 teaspoon baking soda

6 Tablespoons flour

1/3 cup chocolate chips

Preheat oven to 325 degrees.  Lightly oil ramekins.  Mix first 4 ingredients until smooth.  Then add baking soda and flour, mixing by hand.  Mix in chocolate chips.  Split dough between two ramekins and place in large pan.  Fill pan with water about halfway up the sides of the ramekins.  Place pan in preheated oven and bake for 30 -40 minutes until tops are lightly browned.  Serve warm with a scoop of ice cream.
