1 cup butter, softened
3/4 cup packed brown sugar
1/4 cup white sugar
1 (3.5 ounce) package instant vanilla pudding mix
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour
1 teaspoon baking soda
2 cups chocolate chips
Preheat oven to 375 degrees F. In a mixing bowl, cream butter and sugars. Add pudding mix, eggs and vanilla. Combine flour and baking soda; add to creamed mixture and mix well. Fold in chocolate chips.
Drop by teaspoonfuls onto ungreased baking sheet. Bake for 8-10 minutes or until lightly browned.
** My tips to this recipe: one of my favorite things to do is use banana flavored pudding mix instead of vanilla. The banana and chocolate flavors are fabulous! I’m sure you could experiment with other flavors also but I haven’t been brave enough yet. Also, I usually use 1 cup semi-sweet chocolate chips and 1 cup milk chocolate chips. I just can’t decide which I like best in this recipe so I compromise and use both. And last but not least, you have to watch your first sheet in the oven to make sure what amount of time you really need. You want just a hint of color on the cookies. Trust me, they’ll be done but to keep the moist chewiness, you’ll want to pull them out promptly.
